As of January 4th, 2004, Angela and I started the
South Beach Diet. She wanted to try it and I, being the supportive husband that I am, told her that I would do it with her.
For those of you who don't know what the South Beach diet is about, it's similar to the Atkins diet in that it eliminates carbohydrates, especially in the first two weeks.
So for the last week now, we've eaten very little carbohydrates. Breakfast has been Better 'N Eggs egg substitute and two slices of canadian bacon. Angela usually has a 6oz glass of V8 vegetable juice, which I decline due to my aversion to tomato-like juices. Lunch is usually a salad with fresh veggies and some form of protein, i.e. tuna, chicken, grilled steak...
You're allowed to snack. A mid-morning and mid-afternoon snack are in the schedule. Snacks include low-fat mozzerella string cheese, sugar-free jello, pistachio nuts (30 max) and celery with Laughing Cow Light Cheese.
I can honestly say I haven't been too hungry so far, although I do still miss the forbidden foods such as french fries, pizza, potato chips, breads, and deep fried cheese sticks and onion rings.
Dinner is usually pretty tasty. So far we've eaten grilled chicken, grilled salmon (for Angela), london broil on the grill, ground sirloin hamburger, and vegetables like sauteed peppers and onions, mushrooms, cauliflower "mashed potatoes", and steamed green beans.
Overall, it's not too bad so far. The biggest problem is keeping a variety so that you don't get sick of what you're eating.

Yesterday we made a delicious stew with items on the approved food list.
We used bottom round for our roasting beef, green beans, zucchinni, eggplant, cabbage, some low-sodium V8™ juice, a bit of worcestershire sauce and assorted herbs.
The result was pretty good although I think it required some seasoning to taste. I hadn't added any salt when cooking so it needed some when it hit my bowl. My mom recommended throwing in a bay leaf for more flavor.
All in all, it was pretty good and I didn't feel like I was on a diet too much when I was eating it except for the fact I couldn't dip bread in it. We gave all of our bread and forbidden snacks to my mom the day we started the contest, so we have no bread in the house. Mom had to suffer along without bread to dip in her stew just like Angela and me. Of course, we gave her some to take home, so I'm sure she'll "indulge" when she eats her leftovers.
I also started taking bodyfat measurements, hoping to see some progress. Unfortunately, I didn't take one right at the start, but based upon earlier measurements I believe I've made some progress.

Today was the official first day of phase 2. I had a bowl oatmeal for breakfast. It was very tasty. Of course I added about a half pound of Equal™ to make it sweet.
I took a trip to Giant for groceries, getting a lot of stuff that we were previously denied on phase one. I picked up some whole wheat flour and some whole wheat pasta, items that we couldn't have in phase one.
I also bought a lot of stuff that we COULD have in phase one. The idea for phase 2 is to incorporate some foods back into your diet, however I think you're supposed to stick mostly with the core foods from phase 1. One mistake I'll bet some people make is to think that now that you're allowed to eat some of these "carb" foods that you can eat as much as you want. I believe that you're supposed to have learned from phase one that you should moderate the consumption of the foods higher in carbohydrates.
For lunch today, we had a hamburger patty made from 97% lean hamburger. My first official phase two meal is going to be pizza! Angela found a recipe on the web for whole wheat pizza crust, so we're going to give that a try.

Well, last night we had the pizza with the crust made from whole wheat flour and I have to say it was damn good especially for the first try. The shape of the crust wasn't perfectly circular but it was delicious just the same. I thought it was very comparable to a pizza you would get from Al's Pizza or a shop like that
I measured in today, and despite the weekend it looks like I'm losing bodyfat or at least maintaining. I can live with that because I'm usually more well-behaved during the week.

HI, this is Mom (Chris' that is)and I started the South Beach diet approx. 10 days ago. I have been very good so far and only "starved" for the first two days while I was in carbohydrate "withdrawal" but after that I have not been hungry and have not eaten the "forbidden" carbohydrates. My first week weigh in is a loss of 13 lbs. Can't wait for week two to be over, I'm dying to have oatmeal for breakfast. My BMI has gone from 31.3 to 29.5.
